So, my lab yesterday went swimmingly (*hahahah-groan*)! My parter and I made Thai grilled chicken breast with curry rice; sea scallops provencale, and fish-n-chips (the recipe was for fried haddock; i just decided to make chips with it because we had to present a side dish for everything). Actually, she made the scallops, since I'm allergic to them, and the rice and chicken breast, I did the peanut sauce and tartar sauce and fish and chips, and chopped all the veggies.
I went in feeling so unprepared, but we rocked the casbah on that one; we were the first team to present our food.
It was the first time we'd had enough stuff to get done that, timing-wise, we really needed to work together as a team. And we did a good job, I think. Everything was on time, and I didn't even get squikked out at peeling the fish skins off. I don't know what I was worried about. My fried fish was so good! My partner and the two students in the station next to us couldn't stop eating it. It was hot and crispy on the outside, flaky and fluffy on the inside. I felt redeemed for the bad tempura. I will get the hang of the fry-o-lator yet! My chips were a little limp because I forgot to soak them in cold water first, but they tasted pretty good. Hot and just-salty-enough. mmmm. I served them in a little cardboard boat with brown paper and a side of vinegar (I actually made some good tartar sauce, but I think the vinegar is how it's supposed to be done) and lemon wedges.
My peanut sauce was okay; I didn't like it very much by itself, but over the chicken and curry rice, it was great! I think I put too much peanut butter in, and not enough coconut milk, or something. Hmm. I'll have to practice tweaking it later.
I didn't try the scallops because, well, I'm allergic. But they looked good.

All in all, it could have been bad in so many ways, but in reality it turned out so smooth I was surprised, especially after hearing all my friend's horror stories from their lab the day before.

anyway, I am busybusybusy this week. Arrgh, so tired and it never stops. Our presentation for Human Resources went okay this afternoon, even if my group DID seem to value flying-by-the-seat-of-our-pants rather than planning or rehearsing anything ahead of time; I'm surprised we even got a powerpoint presentation together. But, we managed to blow through it, and even got a few laughs from the audience during our (improv) skits; always a good sign.
*sigh* At least it's over now. I finished grading the 475 papers, and am holding extra office hours this week and next because the students have an exam. Still don't have my DEA homework done. I feel like crap about that, he gave me an extension and I just couldn't meet the deadline- the only reason I'm here writing this right now instead of frantically finishing it, is that I knew there was no way I could get it to his mailbox by 5:00 when most faculty go home anyway.
Now I need to go home and find the Wegmans card for my PA, then finish my DEA homework, then come back to school for my good friend's restaurant class's special night, then to work at the library at 9pm. Then home @ 11:30, hopefully to sleep.
